Impossible Pie

2 T butter               4 eggs

1 c milk                   ½ c flour

1 t Baking Powder    ½ tsp salt

1 c cheese               1/2-1 onion

Blend ingredients, then add any of the following :

parsley  – chives – garlic – tomato – bacon - corn – tuna

Pour into a lightly greased square baker or small pie plate (or 2). 
Bake at 190 deg celsius for 35 – 45 mins (or 15-20 mins at 200+ deg C)

optional – When cooked spread cheese over top of pie. Quick grill to crisp cheese

I’ve done this “Impossible Pie” for years - well-received by young and old !!

Another recipe I’ve done only once …

Silver Beet Quiche    (L. Smith)   

4 Eggs                             2 Onions
1.5 c Milk                         4 rashers Bacon
1 cup Flour                       1 tbsp Olive Oil
1 + tsp Baking Powder      3 Silverbeet leaves (similar to chard or spinach)
salt and pepper, chives and parsley to taste

Combine all ingredients together in kitchen whiz.

Bake at 190°C for 45 minutes. Use a 24 cm round dish, 5 cm deep.
